Dopo le interviste a Massimo Bottura e Heinz Beck popEating incontra Francesca del “Team Leviathans Love in honor of the Mouse!”, che per una delle prove di GISHWHES 2014 crea una versione in stile moderniste cuisine della ricetta “Pasta with Jam Sauce” di West Collins. Il sapore di questo piatto ha tutte le sfumature necessarie per poter entrare in una carta di un ristorante stellato. La dolcezza della marmellata di pomodoro fatta in casa, unita alla salsa ottenuta mixando succo di pomodoro, succo di arancia e carota con una spruzzata di gocce di cioccolato,  l’asprezza della mela, la sapidità dei popcorn (in questo caso insaporiti al wasabi per dare un tocco esotico) e la nota croccante dei salatini. La forma della pasta, le famose Rotelle di una nota marca di pasta italiana (usata anche dallo stesso Heinz Beck), rigorosamente al dente, è fondamentale perchè la salsa si insinui in tutti i suoi anfratti e garantisca alle papille gustative un’esplosione di gusto.

After the interviews with Massimo Bottura and Heinz Beck popEating meets Francesca from “Team Leviathans Love in honor of the Mouse“, which for one of the GISHWHES 2014 items creates a modernist cuisine version of the recipe Pasta with Sauce Jam” by West Collins. The flavor of this dish has all the nuances required in order to be included in Michelin-starred restaurant menu. The sweetness of the homemade tomato jam, with the sauce made by mixing together the tomato juice, the orange juice and carrot with a splash of chocolate chips, the sourness of the apple, the flavor of popcorn (in this case flavored with wasabi for an exotic twist) and the notes of crispy crackers. The shape of the pasta, the famous Rotelle of a main Italian pasta brand (also used by Heinz Beck), should be cooked al dente, so that the sauce can coat all the pasta nooks and ensures a taste explosion once in the mouth.
